Mix all ingredients except egg and coarse salt (as well as optional Italian seasoning and parmesan cheese if using) in a medium bowl with fork until a soft dough forms.
Smooth dough gently into a ball on a floured board. Knead 10 times and then divide dough in half.
Roll half of dough into a 12x8 inch rectangle. Cut rectangles lengthwise into 8 or more 1-inch strips. Twist each strip a few times and then place on nonstick cookie sheet.
Beat egg in a small bowl with fork until blended. Brush pretzels with egg. Sprinkle lightly with coarse salt, as well as optional Italian seasoning and parmesan cheese if using.
Bake for 15 to 20 minutes or until golden brown. Remove from cookie sheet to wire rack. Repeat with the remaining half of the dough.
